Beetroot and Chocolate Chip Muffins

A quick and tasty beetroot and chocolate chip muffin recipe. Enjoy!

Ingredients

2 beaten eggs

3.5floz/100ml vegetable oil

2oz/50g chocolate chips

3oz/75g cooked & grated beetroot

2oz/50g caster sugar

2 tsp cocoa powder

½tsp baking powder

4oz/100g wholemeal S/R flour

Method

Pre-heat your oven to 180C/350F/ Gas Mark 4

  1. In a large mixing bowl, add & mix the first 7 ingredients together
  2. Gently fold in the wholemeal S/R flour into the mixture
  3. Place the mixture into muffin cases (makes 5)
  4. Bake for 25-30 minutes
